About SRC Etna Bianco

Given that an acronym is a creative way of summarising a concept or concisely conveying an idea, the Parasiliti family managed to reflect their exciting wine project by taking their name from the first initials of the family members: Rori and Cinzia, and their daughter Sandra. This name, SRC, when pronounced often sounds like the Italian phrase “esserci” meaning “we are here”. Lying at the foot of Mount Etna (east of Sicily), the highest volcano in Italy and one of the highest in Europe, this is a small winery with just under 10 hectares that are sustainably cultivated and whose wines are made with minimal intervention.  

One of their wines, SRC Etna Bianco is a white wine made from the native Carricante and Grecanico varieties that grow on the northern slopes of Etna. 50 year old vines planted at altitude on volcanic soils with a stony frame and sustainably and biodynamically cultivated. Once the grapes have been harvested by hand, they are destemmed and macerated for 12 hours in the press. After gentle pressing, the resulting must is fermented in small stainless steel tanks with native yeasts. The wine is then aged in the same tanks with its lees. Finally, it is bottled with a maximum of 28 mg/l total.

A small, family-owned and traditional winery in the DOC Etna Bianco, their wines are characterised by creativity, freshness and minerality. SRC Etna Bianco is a natural white wine that reflects the unique character of the region and that of the Parasiliti family.
