Tequila and mezcal are two spirits that are produced through the fermentation and distilling of the juice extracted from Agave. Tequila is mainly produced in the Mexican state of Jalisco, although also in municipalities in neighbouring states. To produce tequila, blue agave (Agave tequilana) must be used. Also, tequila must be produced with at least 60% agave syrup, while the rest can be provided through other sources. Mezcal, however, is always made with 100% syrup, although not necessarily using the the blue agave. Mezcal is perhaps more common in the south of Mexico, especially in the state of Oaxaca.
