About Panevino Axina'e Ixinau

Bread, beer, wine, kombucha, kefir, sauerkraut, yogurt... All these products rely on the fermentative power of yeast. In each case, yeast plays a pivotal role in the fermentation process, imparting distinctive flavors, unique textures, and an enhanced nutritional value. Gianfranco Manca, a vintner well-versed in this process, embarked on his journey by experimenting with bread in his uncle's bakery. Over time, he transferred his expertise to the realm of wine, where he has transformed grape juice into vinous masterpieces through fermentation with indigenous yeasts. Situated in the municipality of Nurri, in the south of Sardinia (Italy), he presents a collection of natural wines featuring local varietals and, of course, indigenous yeasts. Wines that, as he puts it, the "energy of man" is the principal component.

Panevino Axina'e Ixinau, a name which in Sardinian means "the neighbor's grape", is a monovarietal of cannonau sourced from local farmers who, sharing Gianfranco's work philosophy, ecologically enhance the local varietals. Old vines planted on limestone, clay, and schist soils, located 700 meters above sea level. The selected grapes macerate and ferment with indigenous yeasts in stainless steel tanks. Afterwards, the wine matures in large used barrels for 6 months. It is then bottled unfiltered, unfined, and without added sulfur.

After more than 10 years of experimentation, Panevino Axina'e Ixinau is a natural red wine that not only showcases the territory and local varietals but is also a pure reflection of the energy of a man who invests his soul in every step of the process.
