About Olivares Valor de Olivares

Twenty-five years ago, they excelled with their dessert wine. That initial foray into sweet wine, one of the first within the D.O. Jumilla, "caused a sensation" and Olivares Dulce Monastrell became an instant success. At the time, the appellation had not yet accepted sweet wines. However, as the proverb goes, "he who saves, finds"; and despite not being able to certify their bottles, the Olivares family prudently set aside a portion of this production in large, old barrels that are now being re-released with Olivares Valor de Olivares.
 
With this revival, the spirit of this family-run enterprise is more alive than ever, as there is no better wine to showcase the full potential and resilience of the Monastrell grape. This was the original vision that led Pascual Olivares (founder of the winery) to embark on a project where only distinctive wines were produced. Today, continuing with the same philosophy, the family still crafts wines from the Hoya de Santa Ana estate in Tobarra (Murcia), proving to the world the versatility of the Monastrell grape. After all, Pascual was right; the Monastrell—an indigenous variety of the region—has demonstrated that it can transcend beyond the strong and robust red wines that were traditionally expected. This is a stark contrast to the smoothness and richness of Olivares Valor de Olivares.
 
The 110 hectares where Olivares Valor de Olivares is cultivated—ungrafted and over 60 years old—thrive on sandy-loam soils rich in limestone. In part, it is this sandy structure that prevented the phylloxera from spreading in this northwestern part of the appellation, making it one of the few Spanish vineyards that survived this 19th-century plague. Today, these venerable vines continue to bear fruit on their own roots, without the need for American grafts. However, this is not the only feature that makes them unique. The altitude at which they are planted—at approximately 825 meters above sea level—subjects the plants to much more extreme conditions than the rest of the appellation, with a significant thermal contrast between warm days and cooler nights, leading to a slower, higher quality maturation (without any pesticides or chemical products). Currently, Bodegas Olivares can boast one of the highest concentrations of vines of this kind. This privilege is not afforded to everyone and must be carefully preserved, right? To ensure their survival, Bodegas Olivares employs the Marcottage method, a replanting technique that involves burying a shoot from an already planted vine into the ground. Gradually, this new branch is guided and cultivated until, over the years, it becomes strong and develops its own roots, transforming into a fully independent plant capable of sustaining itself. The Marcottage method, almost obsolete now, entails high costs. However, no other replanting technique can ensure the preservation of the essence of these nearly century-old vines in such a manner.
 
In the winery, Olivares Valor de Olivares is destemmed and crushed, followed by an extended maceration period of about 30 days. After this, Olivares Valor de Olivares will ferment using indigenous yeasts in stainless steel tanks. And you already know the rest of the story: nothing less than 25 years of aging (which includes time for oxidative maturation) in large, old barrels.
