This indigenous variety from Córdoba —specifically from Montilla-Moriles— also astonishes with other profiles and less cloying facets, as exemplified by Marenas Matapalo. What a marvel!

Marenas Matapalos is a natural white wine crafted in the very heart of Andalucía. One must journey to the Campiña Cordobesa (in the south of Spain) to encounter José Miguel Márquez, the viticulturist and soul behind the Marenas winery, where he dedicates himself passionately to reviving "the wines of yesteryear". This venture commenced in 1997, and since then they have succeeded in showcasing to the world the purest expression of this land, caressed by the Guadalquivir, where the albariza soil intermingles with sandy terrains under an extreme climate, where stark contrasts ensure the grapes' optimal and impeccable ripening. Little else is needed to produce wines here. No pesticides or chemical products. Only tradition and the expertise of several generations that is passed down through an absolute respect for the environment, the utilization of native grasses, and manual harvests.

In particular, Marenas Matapalos is cultivated at Río Filtro Alto, a vineyard of approximately 1,500 vines situated at an altitude of some 450 meters, right on the Senda de Matapalos, in the Sierra de Montilla. This place remains a haven or hideout for small-scale producers who year after year manage to create unique and unparalleled wines. In the case of Marenas winery, when grafting, a shoot from an old vine was chosen, a practice somewhat divergent from the norm, characterized by retaining a bit of residual sugar at the end of fermentation. This nuance also influences the production of Marenas Matapalos, which is directly pressed and allowed to ferment with indigenous yeasts.
