When we speak of the Marco de Jerez, we almost instinctively think of flor yeast, biological ageing, and century-old casks. But what if someone decided to view the vineyard from a different perspective? This is where Equipo Navazos comes in, always ready to break the mould without losing respect for tradition.
OVNI means Unidentified Flying Object. That is, something we see, which intrigues us and doesn't quite fit into the known. This is precisely the philosophy behind OVNI Palomino Fino, a wine that defies southern expectations and offers a different, more liberated and direct interpretation of Andalusian wines.
Behind the project are Eduardo Ojeda and Jesús Barquín, genuine "treasure hunters" of the Marco de Jerez, a sort of Indiana Jones of wine who know where to search and, above all, what is worth salvaging. Together with Coalla Gourmet, they drive this initiative with the clear aim of demonstrating that in Andalucía it is also possible to produce fresh, entertaining, and precise wines, without forgoing the depth or character of the origin.
OVNI Palomino Fino is crafted from palomino fino sourced from old vines in the Miraflores La Baja estate, a coastal area of Sanlúcar de Barrameda marked by Atlantic influence. It ferments in stainless steel at controlled temperatures and spends very little time in the tank, deliberately avoiding the action of the flor. The objective is to let the wine speak for itself and for the minerality of the albariza and the identity of the terroir to be expressed with clarity.
OVNI Palomino Fino is a surprising, precise, and vibrant white wine, moving beyond the usual coordinates of the Marco de Jerez. A wine that doesn't come from another planet, but certainly from a restless mind. And like any good OVNI, once you discover it, you never forget it.
