About Equipo Navazos La Bota de Palo Cortado 121

Under the label “La Bota de…”, Equipo Navazos invites us on a journey through traditional Andalusian wines, genuine treasures that, due to their complexity, elegance, and character, rank among the world's finest wines. It all began in 2005 when, aware of the hidden gems in the cellars of Jerez, Sanlúcar, El Puerto, and Montilla, Eduardo Ojeda and his team decided to revive them, breathing new life into them with patience, passion, and expertise.

One of their most groundbreaking contributions to the world of palo cortado from the Marco de Jerez is La Bota de Palo Cortado 121, a wine that, although relatively young, meets all the criteria of elegance, purity, and complexity that this noble category demands. 

This wine hails from the Hijos de Rainera Pérez Marín winery in Sanlúcar de Barrameda, and is crafted in the Pago Miraflores La Baja. Only the harvest from two vineyards in the same area, corresponding to the 2010 vintage, is used, with palomino grapes aged between 50 and 80 years. Planted in albariza soils and under an Atlantic climate, these vines provide a distinctive structural and mineral foundation.

The vinification follows a fundamentally oxidative approach, although the wine underwent biological aging in tanks while awaiting the moment to be fortified to 17.5 °C before being transferred to the aging casks. During maturation, the wine is kept in Jerez casks and 225-litre Bordeaux barrels, filled “a tocadedos” to control oxidation and maintain a perfect balance between freshness and complexity.
