About El Serbal

El serbal, locally known as "jerbal," is a tree steeped in symbolism: in Celtic tradition, it embodies the essence of life, and in ancient legends, it was believed to possess protective powers against spirits and witches. Its name lends identity to a wine that seeks to capture the same strength and character of its surroundings: El Serbal.

Behind this project is Adrián Alonso, a young agro-food engineer who, after studying oenology at the Polytechnic University of Madrid, returned to Burgos (Castilla y León) with a clear mission: to rescue century-old vineyards and reflect the personality of Arlanza in every bottle.

El Serbal originates from a dozen plots located in Covarrubias, along the banks of the Arlanza River. Its vineyards, over 80 years old, are situated at more than 900 meters above sea level, surrounded by cherry trees, almond trees, and forests. Each plot, with its unique orientation, contributes distinct nuances to the wine. The soils are sandy-loam, low in organic matter with coarse elements on the surface, ideal for the deep roots of the old vines to express minerality and freshness.

The grapes of tempranillo, garnacha, and some white varieties are completely destemmed. Following a spontaneous fermentation with indigenous yeasts, malolactic fermentation takes place in used barrels of various sizes, where the wine also ages for 13 months, developing elegance, complexity, and authentic character, true to its origin.
