About Domaine Tollot-Beaut Aloxe-Corton 1er Cru Les Fournières

In the early 20th century, the wine industry in Burgundy was dominated by merchants. The majority of wines were sold in bulk and bottled far from where they originated. However, in 1921, the Tollot family broke with tradition by pioneering the bottling of their own production, marking a turning point in the region. This seemingly simple act symbolised the desire to faithfully express the character of their vineyards and assert the identity of each plot.

Today, nearly a century later, Domaine Tollot-Beaut remains in the family's hands. Nestled in the heart of Burgundy, in the small village of Chorey-lès-Beaune, the estate encompasses 25 hectares in the prestigious Côte de Beaune. Their vineyards span a variety of renowned terroirs that the family knows intimately, almost like old friends. Each plot possesses its own personality, and each vine is tended with the precision of a watchmaker.

At the helm of the project is the sixth generation: Nathalie Tollot in charge of the commercial side and Jean-Paul and Olivier overseeing production. The estate's motto remains unchanged: “eighty percent of the work is done in the vineyard”. And it's not just a saying; it's a way of life. Manual harvesting, rigorous selection of bunches, and respect for biodiversity are the foundations of their success. The work in the winery is minimalist, designed solely to accompany rather than transform.

One of the most brilliant examples of this dedication is their Domaine Tollot-Beaut Aloxe-Corton 1er Cru Les Fournières. Sourced from a historic vineyard with clay-limestone soils, this wine embodies the classic elegance of the Côte de Beaune. After manual harvesting, the bunches are destemmed and fermented in open vats, with gentle pump-overs to extract silky tannins and precise aromas. Subsequently, the wine matures in carefully selected French oak barrels for 16 months, where it gains depth and complexity without losing its natural freshness.
