About Cati Ribot Son Llebre blanco
Although Cati Ribot, a true-born Mallorcan, was born and raised amidst family vineyards producing full-bodied, high-alcohol wines, it was during her sommelier studies in Barcelona that she discovered a completely different style of wine, far removed from those traditionally crafted on her native island. It was then that she decided to follow her heart and implement new winemaking techniques, as well as revive native Mallorcan grape varieties, to create fresh wines with low alcohol content, minimal intervention, and no added sulphites. Under the name Ve d’Avior ("time past" in Mallorcan), Cati has brought to life a project that honours ancestral knowledge and respect for the land. A new approach that has become a genuine laboratory of experimentation, attracting young natural winemakers like Oriol Artigues, Joan Rubió, and Eloi Cedó, to share knowledge, collaborate, and create innovative wines that blend tradition with modernity.
Thus, Cati Ribot Son Llebre blanco is a white wine crafted from native varieties such as giró, malvasía, and premsal, sourced from vineyards planted on clay-limestone soils located in the municipality of Santa Margalida, in the northeast of Mallorca. It is organically farmed, without chemicals that could disrupt the natural balance of the terroir. The harvest is done manually and, once in the winery, it undergoes partial maceration with its own skins. Afterwards, it is directly pressed and ferments with indigenous yeasts in stainless steel tanks.
Fluid, straightforward, and highly original, Cati Ribot Son Llebre blanco is the purest expression of the natural wine movement on the island. A liberated wine, born from deep knowledge and love for the land that, through her work, Cati has managed to transform into a true viticultural gem.
