About Casa Castillo Las Gravas
Once the harvest is complete, the grapes are crushed, with 25% of whole clusters, and each variety ferments separately in small underground vats.
After racking, a process by which the wine is separated from the grape skins, the varieties are transferred to 5000-litre vats and smaller 500-litre vats. The malolactic fermentation takes place in these.
Casa Castillo Las Gravas subsequently ages for 20 months and, finally, the varieties are blended before bottling.
Finca Casa Castillo boasts a rich history, as the winery was constructed by the French as early as 1870. It was acquired by Don José Sánchez Cerezo in 1941. In 1991, the winery was renovated and adopted the name it bears today.
Finca Casa Castillo is, without a doubt, one of the most emblematic and authentic wineries of the D.O. Jumilla.
