A marvel, one of Italy’s best! To your tables comes Ca' del Bosco Vintage Collection Saten, a dry sparkling wine, direct from northern Italy (specifically Lombardy) and produced by the Ca' del Bosco winery in the D.O.C.G. Franciacorta Millesimato.
Some compare this area to the A.O.C. Champagne, and the truth is that when someone says this, talking about quality, they are not far off finding the Italian equivalent. Since 1964 the cantina Ca' del Bosco have put all their efforts into making the best wines and sparkling wines. They have even managed to send their grapes to a spa before vinification! This is what they call the terme degli acini a washing and drying system, set up in 2008, that all the harvested bunches pass through to eliminate microorganisms, dust and residues from agricultural treatments. This is the only way to achieve purer wines, capturing the character and nature of the 12 vineyards aged over 34 years old where Ca' del Bosco Vintage Collection Saten starts life. These certified organic vineyards are located in the municipalities of Erbusco, Adro, Cazzago San Martino, Corte Franca and Passirano.
Starting from the land, considered the beginning of everything, every single detail of Ca' del Bosco Vintage Collection Saten is taken care of. After the harvest and the ‘spa’ that follows, the grapes are always carefully transported, avoiding shocks and always ensuring they are kept in a good condition when they reach the winery. Here, following a selection process, they attempt to lower the temperature of the bunches before they go to the press, where the grapes are crushed in three stages. This is the only way to obtain musts with different qualities, where the first batch (considered the highest quality) will express the indistinguishable style of each territory to the maximum.
Once the must has been obtained, the Ca' del Bosco Vintage Collection Saten vinification process begins, and is characterised by the absence of oxygen at different stages: during pressing, disgorging and bottling. This technology, pioneered by Ca' del Bosco, makes it possible to greatly reduce the amount of sulphites used to preserve the wine. Likewise, this quality is guaranteed by gravity racking, which maintains the characteristics gained by the wine almost intact. Ca' del Bosco Vintage Collection Saten is made through the blending of 14 Chardonnay and Pinot Bianco base wines that are fermented and aged in oak barrels (for less than a year).
Finally, Ca' del Bosco Vintage Collection Saten is bottled and far exceeds the minimum time required by the D.O.C.G. Franciacorta Millesimato, with 48 months racked before disgorging, with a minimal amount of liqueur de tirage added at the end. And that’s it!
