This is the philosophy of Arnaud Baillot, whose winery is situated just minutes from Beaune, in the heart of the Côte d’Or. Together with his wife Laure, he meticulously oversees every stage: from vineyard care to the precise selection of wood for maturation, ensuring that each bottle is an authentic interpretation of the terroir. 

At Arnaud Baillot, the stars are pinot noir and chardonnay, perfect ambassadors of the terroir. Each grape narrates the story of its origin and transforms into wines with such iconic appellations as Meursault AOC, Volnay AOC, Pommard AOC, Gevrey-Chambertin AOC, or Chassagne-Montrachet AOC. The winery's philosophy is clear: to respect and enhance the viticultural heritage of Borgoña.

An example of this mastery is Arnaud Baillot Chassagne-Montrachet. The chardonnay harvest is conducted by hand, with careful selection of each cluster. Fermentation takes place in stainless steel tanks, with indigenous yeasts, preserving the grape's natural expression. Afterwards, the wine rests for up to 12 months in French oak, of which 25% is new, achieving a perfect balance of freshness, complexity, and texture.
